Potato and quinoa tortillas


1/3 cup of quinoa

2/3 cup of water

1 1/2 cups peeled and grated potatoes

1 large egg 1 teaspoon fine sea salt

1/4 teaspoon pepper

1 tablespoon butter

2 green onions


Combine the water with the uncooked quinoa in a pot and boil it. Once ready, cover the pot and let it simmer for 10 minutes. Then, turn off the burner and leave the covered pot on the burner for another 6 minutes. Gently stir quinoa and allow it to cool. In a large bowl, mix the cooked quinoa with the egg, grated potato, pepper, and salt. Heat a large skillet over low heat and melt 1 1/2 teaspoons of butter in it. Pour half of the quinoa mixture into the pan and flatten the tortilla with the back of a spatula. Cook for 5 to 7 minutes on each side until golden brown. Repeat the process with whatever remains of the mixture. Lists and wonderful to serve with a fried egg.
