Thai chicken with quinoa


1/2 cup of uncooked quinoa, rinsed

1 chicken breast, cooked and shredded

1/3 cup chopped carrots

1/3 cup of edamame shells (harvested soy beans still green)

1/3 cups cut green onions

1/4 cup chopped peanuts

1/4 cup fresh chopped cilantro


Prepare the quinoa by following its instructions. Most of them ask for 1 cup of liquid. I prefer to use low-sodium chicken or vegetable broth. While the quinoa is cooking, pour all the ingredients of the sauce into a bowl and stir to combine. Once the quinoa has absorbed all the liquid, stir with the sauce. Add the chicken, carrots, edamame and green onions, mixing. Try and season with a little salt and pepper if necessary. Add half of the peanuts and cilantro, then serve in a large bowl, with peanuts and cilantro left on top. I like to serve this with a salad, soup, or even a sandwich.
