Quinoa and orange cookies

Ingredients

150 gr. cooked quinoa (about 70 gr.)

80 gr. oatmeal

1 small egg

1 orange brush

1 teaspon of cinnamon

70 gr. sugar

40 GR. butter

Preparation

1.- We start by cooking the quinoa. For this we must wash it before to eliminate the saponin. The saponin is a substance that covers the grains and that if we do not eliminate it will give bitterness to the result. Wash the seeds under tap until the water is very clean. We will see that at first it will release a kind of foam.

2.- We cook the quinoa considering one part of cereal and two of water. Cook 15 to 20 minutes over medium heat, until the water has evaporated and the quinoa is tender but not very chafada.

3.- Drain well the water from the cooked quinoa, allowing it to cool in a colander.

4.- Mix all the ingredients for the cookies, the cooked quinoa, the oats, the egg, the orange zest, the cinnamon, the sugar and the melted butter. Mix well with a fork.

5.- We place portions of dough on a baking tray on baking paper. It is not necessary for them to be too far apart, the mass will not grow.

6.- With the oven previously heated to 200ºC, bake for 15 or 20 minutes, until we see that the cookies are golden brown.

7.- We leave the cookies on a grid once we remove them from the oven, until they cool down.
