1 cup of quinoa
1/2 red pepper
1 purple onion
1 bunch of coriander
1/2 cup flour
1 tablespoon of oregano
1 tablespoon cumin

We start by placing the cup of quinoa in a colander and bathing it with cold water to clean it. When the quinoa is wet, a white foam will form, which you should remove every time it comes out. Then reserve.
Wash and cut the onion and pepper into very small squares. Then, finely chop the cilantro and peel and grate the carrot.
Add oil to a pan and, when hot, sauté the onion, pepper and carrot for five minutes.
When you have the sofrito ready, let's cook the quinoa. You have to put two cups of water in a pot, salt and pepper. Add the quinoa when the water starts to boil and add the sofrito too. Cook over high heat until the water evaporates, then lower the heat to a minimum for twenty minutes.
When the quinoa is ready, let it cool until it is at room temperature. Then place it in a bowl and add the flour and spices. Knead with your hands until you have a homogeneous mass.
Cover the bowl with aluminum foil and store the dough in the fridge for thirty minutes to rest and take better consistency.
After this time, remove the dough and start to assemble your burgers by taking a portion of the mixture to form a uniform ball and then crush it to the thickness of your preference.
After putting all the quinoa burgers together, add a little olive oil to a pan or griddle and cook for five minutes on each side. Your quinoa burger is ready to enjoy. Serve with a good portion of salad, with a piece of bread or with any garnish of your choice. Enjoy your meal!
If you prefer, you can use chickpea flour to give consistency to the mass of your quinoa burger.
